This week's Presqu'ile at Home features a wintery-dish served on every countryside table in Southern France. Cassoulet, like so many heritage dishes, is made of simple ingredients, cooked for a long time in rich flavors, and filled with cravable nostalgia. Rules for Cassoulet are pretty basic: white beans, a lot of garlic, duck (or goose) and sausage topped with plenty of bread crumbs. Chef Julie Simon, a Parisiens, prepares her Cassoulet with Duck Confit (duck legs braised in duck fat), classic Saucisson (think more Summer Sausage, than Italian Salami) and Cured Pork Belly (house-bacon!). We'll be pairing this Classic French-Winter Stew with none other than our 2019 Carbonic Gamay Noir. The ultimate food-wine, our juicy, fresh Gamay will cut straight through the richness of this dish, replenishing your palate bite after bite!

To step into a New Year full of good fortune, health and happiness we have a few rules to abide by, and thankfully Hoppin' John + a Mess of other Southern-dinner favorites will cover most of our bases! Being born and raised in Southern Arkansas, Hoppin' John was served every New Year's Day and has been for more than a century. This tasty dish of rice, black-eyed peas and pork is believed by many to ensure wealth and bring good luck in the upcoming year.

THIS WEEK, FRIDAY 12/18: South African Durban Curry + 2019 Presqu'ile Vineyard Rosé

Chef Julie + Winemaker Dieter Cronje share a great love of curry and if you've come to visit Presqu'ile in 2020 you would have likely experienced one of many that adorn our menu. This favorite hails from Dieter's homecountry, a dish made famous by the city of Durban, and is made rich with braised meat (our version is with pork shoulder), pepper, lime, sweet warming spices and coconut milk! And, don't worry, she's not skimping on any accoutrements: Rice and Toasted Coconuts, Sambal (unfortunately we couldn't get our hands on any Mrs. Balls Chutney - if you know, you know), Yogurt Raita, a bouquet of fresh mint, Papadum and Naan! Paired with a bottle of our 2019 Presqu'ile Vineyard Rosé. $65 / serves 2-4
